Broccoli Frittata 
 

Ingredients:
2 cups broccoli florets
1 egg yolk
4 egg whites
1 packet thick vegetable soup mix (65g)
200 mls skim milk
1/2 cup grated low fat tasty cheese


Method:
1. Place broccoli in greased baking dish (24cm x 16cm x 6 cm).
2. Mix egg yolk, whites, soup mix and milk in a bowl and pour over broccoli.
3. Sprinkle grated cheese on top.
4. Bake at 180° for 45 minutes.
